Ingredients
1roma tomato, diced
⅓cupdiced salami
½cupsalt free garbanzo beans, drained and rinsed
½cupshredded mozzarella cheese
2cupchopped romaine lettuce
2tablespoonItalian salad dressing
black pepper, (optional)
Instructions
Combine ingredients in a bowl and serve, topping with freshly cracked black pepper.
Notes
My favorite salami to use is the hard salami that comes from the deli. I order 1/4 lb of it, and ask for it to be cut thick (about 1/2 per slice). Then I dice it into cubes.
